Smörgåstårta (English: “sandwich-cake”) is a Scandinavian cuisine dish that is popular in Sweden, Finland and Estonia. This salty cake is compositionally similar to a sandwich, but it has such a large amount of filling that it more resembles a layered cream cake with garnished top.
The smörgåstårta is normally made up of several layers of white or light rye bread with creamy fillings in between. The fillings and toppings vary, but egg and mayonnaise are often the base, additional filling may vary greatly but often includes one or more of the following: liver paté, olives, shrimp, ham, various cold cuts, caviar, tomato, cucumber, grapes, lemon slices, cheese and smoked salmon. For the best result, assemble the cake the day before consumption and let it rest in the refrigerator overnight. Decorate the cake on the day of consumption.
Smörgåstårta is served cold and sliced like a dessert cake. The types of sandwich cakes vary from meat, fish, combinations of cheeses and meats to vegan. The smörrebröd top decor often reflects the ingredients used as a filling. Voileipäkakku (in Finnish) is part of family gathering dishes from birthday parties, weddings or funerals in Finland.

The simplest recipe is from AdventureFoodie, I like that you do not need to bake a whole round loaf of bread and just use slices instead. But for a healthier recipe, use grain breads as rye, multi-grain, and sprouted breads.
- Remove crust and place 3 slices side by side on a large plate and spread a generous layer of your favorite spread on top.
- The next layer of bread is placed perpendicular to the first, here you can spread another type of spread i.e. wild caught salmon and organic cream cheese, or your vegetables, lettuce, sprouts, etc…
- After 4 layers of filling, place a round cake pan on top and cut to shape creating a cake shape.
- Wrap the cake in wax/plastic wrap and leave it set for a couple of hours (refrigerate).
- Frost it with a half organic mayonnaise half organic sour cream mix or your preferred spread, add your decorative foods on top and sides.

Introducing the smörgåstårta! If you haven’t seen one of these before, it’s a Swedish sandwich cake with layers of bread separating creamy fillings. I can’t remember where I first heard of them but I’ve been aching to make one for the longest time. If you run a Google image search you’ll be amazed at the wide range of incredibly creative smörgåstårtas out there. In the end, I decided to make the recipe from Saveur, which is filled with smoked salmon and smoked herring mousse. Read on to see what goes into making one of these party showstoppers!

- 1 large seedless watermelon
- 2 cans full fat coconut milk (left in fridge for 6 hours or more)
- 1/2 tsp. vanilla extract
- 1 Tbsp. raw honey
- 1 cup sliced raw almonds
- Seasonal fresh fruit (for topping)
Watermelon Cake! Remove the ends and rind from a watermelon and cut into 6 wedges/slices. Dip the end of each slice in coconut whipped cream and then in toasted slivered almonds. Reassemble the wedges on a plate, top with more coconut whipped cream and your favorite fruit.
