From scratch! This homemade chicken soup is full of antioxidants & phytonutrients to fight your cold & restore you back to health. In this post I’ll show you three different ways to make your chicken soup, you may alter the ingredients according to your diet preference. First let’s start out with my SuperFoods Chicken Soup…

1. SuperFoods Chicken Soup

  • Wash chicken well and place into a large pot of cold water, (water level to cover most of chicken). Cook for in high heat for the first 20 – 25 mins.
  • Lower heat settings then add olive oil, chopped turnips, carrots, celery & celery leaves, onion, your choice of greens (spinach, kale, mustard greens) and add your spices: garlic, parsley, ginger, turmeric, red chile pepper flakes, bay leaf, thyme, salt & pepper to taste.  Cover pot & cook for additional 30 mins. or until chicken meat falls off the bone.
  • Add a hand full of rice at the last 20 mins of cooking.
  • Remove pot from burner and add a half of fresh squeeze lemon into the soup mix.

Note: If you are a vegetarian, minus the chicken, add more greens, saute mix in stir fry pan, and then add into large pot of water. You may add organic miso paste 1 – 2 Tbsp to the vegetable stock for added nutrients.

2. Mexican Chicken Soup

ingredients:

 Toppings:  fresh lime, cilantro, avocado, organic corn tortillas side

instructions:

  • For whole organic chicken – wash & rinse well, place into large pot of cold water (water level to cover most of chicken), Cook for in high heat for the first 20 – 25 mins. *For chicken breast – Preheat oven to 350 degrees F (175 degrees C). Lay chicken breasts onto a baking sheet and sprinkle with seasoning. Bake for 30 minutes, cool and shred or cut into strips.
  • Lower heat settings then add olive oil, onions, celery, carrots, garlic, 1 can of organic diced tomatoes, jalapeno peppers/green chiles, and add spices: cumin, coriander, oregano, most of the fresh cilantro (save some for toppings), cover pot & cook for additional 20 – 25 mins..  *For chicken breast recipe – in a large pot add olive oil, 3 (14 ounce) cans of organic unsalted chicken broth, then add your vegetables & spices and chicken strips, cook for an additional 25 – 30 mins.
  • Serve in a bowl, add a fresh squeeze wedge of lime, a garnish of cilantro, a couple of slices of avocado, and some warm organic corn tortillas on the side. Yummy!

Note: No sour cream or diary products during recovery… you want to get the full nutritional benefits without mucus forming foods that may hinder the purpose of healing.

 3. Greek Chicken Soup (Avgolemeno)

ingredients:

  • Whole organic chicken or for a smaller portion, you may use 1/2 organic chicken
  • 2 – 3 Tbsp olive oil (1st press, cold press, extra virgin – Greek olive oil)
  • 2 carrots chopped
  • 1 large onion chopped
  • 1  celery stalk with a few celery leaves chopped
  • 1 leek chopped
  • fresh chopped parsley – hand full
  • 1 bay leaf
  • hand full of arborio rice
  • fresh ground pepper
  • salt to taste
  • 1 whole fresh squeeze lemon
  • 2 large eggs

instructions:

  • Wash & rinse chicken well and place into a large pot of cold water, (water level to cover most of chicken). Cook for in high heat for the first 20 – 25 mins.
  • Lower heat settings then add olive oil, carrots, onions, celery & leaves, parsley, leek, add spices: bay leaf, fresh ground pepper, salt. Cover pot & cook for additional 30 mins. or until chicken meat falls off the bone.
  • Add a hand full of rice at the last 20 mins of cooking.
  • On the side separate egg whites from yokes; in a medium sized bowl, beat the egg whites until fluffy, then add egg yokes and beat again, finally add 1/2 of fresh squeeze lemon into mix, and beat again. Once the chicken soup is all done, remove from heat, cool down for 10 – 15 mins. then add lemon-egg sauce into pot of soup.
  • Serve in a large bowl, you may add more lemon juice if desire.
