This recipe is amazing! I love dreamsicles as a child, one of my favorite flavors, and I’m not too big on sweets/cakes loaded with sugars! When it comes to desserts, I like it simple & easy, natural, delicious & healthy! This recipe is no bake, grain free, gluten free!
Makes 12 Regular squares or 24 Mini Tarts
Creamsicle Ingredients:
- 3 large organic oranges & some orange rind (in mix and as a garnish)
- 1 Cup Low-Fat Plain Greek Yogurt
- 2 Tsp Organic Vanilla Bean Powder (I make my own)
- 3 Tbsp Raw Honey or Pure Maple Syrup
Crust Ingredients:
- 1 Cup Pitted Madjool Dates
- 1 Cup Unsweetened Shredded Coconut
- a little orange rind shavings
- 1 Cup Raw Cashews
- 1 Tsp Organic Vanilla Bean Powder
Directions:
- Place all crust ingredients in the food processor and blend until dough-like
- Coat your tray with a thin amount of coconut oil
- Evenly distribute and press down the crust in each muffin cup or baking tray
- Now take the dreamsicle ingredients into the food processor and blend until smooth, adding more of any ingredient to your liking
- Pour the creamsicle blend over each crust evenly
- Cover muffin tin or tray with plastic wrap and place in the freezer 8 hrs. – overnight
- Remove from the freezer, pop out each muffin or cut from tray into squares & serve
- Store the rest in a sealed container and keep in freezer
Coconut Whipped Cream (optional)
Ingredients:
- 1 Can Organic Coconut Milk
- 1 Tbsp Pure Organic Vanilla Extract
- Natural Flavors or sweetener – (optional)
Directions:
- Place can of coconut milk in the refrigerator overnight to separate the coconut cream from the oil
- Open can and scrape only the thick coconut cream from the top half of the can
- Turn your mixer or hand beaters to high speed and whip the coconut cream for 3 to 5 minutes, mix in vanilla/sweetener – if using. Whip until it is the consistency of whip cream.
- Top your squares/muffins with this delicious natural cream!

I should mention, though, that the recipe is vegetarian, yes, but not vegan. (If I proposed making this for my vegan husband or friends, they’d hog-tie me for making it with yogurt, and string me up if I even hinted at adding honey instead of the maple syrup!)
